GRADE A
LIGHT AMBER or FANCY - very delicate flavor and light color.
Made early in the season and used to make maple cream and
candy.
 GRADE A MEDIUM AMBER - more maple flavor
and the favorite table syrup.
 GRADE A DARK AMBER - slightly darker and
more flavorful and becoming the #1 table syrup.
 GRADE B or COOKING GRADE - darker color and
stronger flavor that comes through when cooking or flavoring
with.
 INDIAN SUGAR - a granulated form, used on
toast, hot cereal and baking. Store in a cool dry
place.
 MAPLE CREAM - a spreadable form for toast,
donuts, pancakes or waffles. May separate, just stir and keep
refrigerated.
 MAPLE CANDY - a unique confection made from
pure maple syrup, sold in a variety of shapes and
sizes. |
